Case studies: Production process for jellies, puddings and mousses

Customer Customer

A Portuguese company with over 25 years experience in manufacturing jellies and preparations in powder form for desserts.

Project Project

The company wanted to expand its portfolio with a new range of ready-to-eat products. Their customers would be able to buy ready-prepared jellies, puddings and mousses as an alternative to powder preparations.

This new manufacturing process required the company to expand their facilities with equipment that would ensure the best quality end product possible by thoroughly dissolving powder ingredients and jellification inside the container.

Why INOXPA? Why INOXPA?

With the aim of creating a high quality end product, INOXPA invited the customer to tests the machinery prior to purchase.

Several tests were carried out in INOXPA's pilot plant to test that vacuum suctioned powder is fully dissolved in water, with or without heat, depending on the characteristics of each product, to ensure jellification of the product inside the container.

The project needs were analysed and the proposal was split into several phases.

Initially, the CIP was evaluated and after a second phase, the proposal was expanded with two reactors and two buffer tanks.

Lastly, INOXPA completed a full installation.

Installation characteristics Installation characteristics

- 1 x 3 tank fixed CIP (1m3 water+0.5m3acid+0.5m3soda)

- 2 x 500L reactors with a services box + electrical panel + suction hoppers

- 1 SilPig (two launchers and one receiver) + electrical panel

- Pipes connecting different units.

- 2 distribution panels between reactors and the filling machine

Special features Special features

The customer can now produce end products based on their own recipe and can also control the entire process to ensure the required quality outcome.

The process involves introduction of water through a flow meter (by batch), inlet of powders through the solids hopper, and control of the temperature according to the recipe specifications (Heat/Cool/Maintain).

Then the product is sent to the filling machine, controlled by a mass flow meter.

The customer can perform CIP cleaning of three separate lines:

- reactors line
- pipeline
- filling machine line
